Что понадобится:
Свинина (шейка), кефир, горчица с зернами, чеснок, базилик, приправа "тандури масала".
Мясо будет двух видов - одно маринуется в кефире с тандури, второе мясо будем запекать как буженину.
Кто испугался слова "тандури" - можете смело брать молотый красный СЛАДКИЙ перец.
Тандури (или красный СЛАДКИЙ перец) перемешиваем с кефиром и даем настояться минут 15-20.
Чистим и рубим продолговатыми кусочками чеснок. Осторожнее, не рубаните пальцы.
На пищевую пленку кладем свинину. Теперь ножиком протыкаем кучу дырочек в мясе, и пихаем туда чеснок. Мясо весело обмазываем маринадом, и укутываем в пленку, стараясь чтоб не было пузырей.
Второй кусок мяса мы умышлено оставили без маринада. Поэтому так же нашпигуем свинину чесноком, и щедро обмажем горчицей. Мясо заворачиваем в пленку, и кладем на пару часиков промариноваться. Обратите внимание - солить мясо не нужно!!! Иначе соль вытянет весь сок, и вы получите подошву от старого кроссовка.
Итак, мясо маринуется два-три часа.
Прошло три нелегких часа, выкладываем мясо на фольгу, свинину аккуратно заворачиваем.
Предварительно разогреем духовку и, когда температура будет порядка 200 градусов, пихаем туда нашу свинину. Время приготовления - ориентировочно сорок минут - час.
По истечении времени необходимо собраться и сделать сложную операцию. Быстро открываем дверцу духовки, вытаскиваем наше блюдо, дверь духовки моментально захлопываем. Аккуратно вспарываем сверху фольгу, раскрываем мясо, и обратно пихаем в духовку.
Для чего мы провели такую операцию - в фольге мясо запеклось, а без фольги мы получим очень вкусную корочку.
Запекаем мясо еще минут 15-20-30 до момента возникновения корочки.
Режем на кусочки, и подаем на стол.

Запекаем куски отдельно, у них же разный маринад. Солить по вкусу и лучше по факту, иначе получиться сухое и жесткое мясо.
